  3. Gradually add the rest of the sifted flour, beating until the mixture is smooth.
  4. Stir in the melted butter, egg yolks, sugar, and salt.
  5. Warm the milk and add it gradually to the mixture until a smooth batter is obtained.
  6. Leave the batter in a warm place to rise a second time.
  7. Beat the egg whites until they hold soft peaks and fold them into the batter when it has doubled in volume.
  8. Allow the batter to rise a third time until it is full of bubbles.
  9. Heat two small frying pans and brush them with melted butter or oil.
  10. Pour tablespoons of batter into the frying pans.
  11. Cook until the blini are thin and full of holes like lace.
