Ingredients

  • 8 hard-cooked eggs
  • 1/3 cup crumbled blue cheese
  • 1/3 cup sour cream
  • 3/4 teaspoon vinegar
  • chopped pimiento

Instructions

  1. Peel the eggs and cut them lengthwise.
  2. Remove the yolks and set aside the egg whites.
  3. Mash the yolks with crumbled blue cheese.
  4. Blend in sour cream and vinegar until smooth.
  5. Fill the egg whites with the yolk mixture.
  6. Garnish with chopped pimiento.
  7. Cover and chill before serving.
  8. Serve in lettuce cups.
