Pineapple Astoria

Ingredients

  • 1 can crushed pineapple
  • 1 pkg. miniature marshmallows
  • 2 pkg. lemon gelatin
  • 1 1/2 Tbsp. cornstarch
  • 1 egg
  • dash of salt
  • 1 Tbsp. butter
  • 1 pt. whipping cream
  • 1 can flaked coconut
  • 1 c. chopped nuts
  • maraschino cherries

Instructions

  1. Drain the crushed pineapple and reserve the juice.
  2. Line a 9 x 13-inch dish with pineapple slices.
  3. Top the pineapple with miniature marshmallows.
  4. Dissolve the lemon gelatin in boiling water and pour over the marshmallows.
  5. Allow the mixture to cool, then refrigerate until set.
  6. Add water to the reserved pineapple juice to make 1 cup.
  7. Mix cornstarch with a little of the pineapple juice and set aside.
  8. Beat the egg well.
  9. Combine the egg, cornstarch mixture, salt, and butter in a saucepan.
  10. Cook the mixture, stirring constantly until thickened, then cool thoroughly.
  11. Whip the whipping cream until stiff peaks form.
  12. Fold the whipped cream into the cooled gelatin mixture.
  13. Spread the gelatin mixture over the pineapple and marshmallows in the dish.
  14. Top with flaked coconut, chopped nuts, and maraschino cherries.
  15. Refrigerate until ready to serve.
