Ingredients

  • 12 - 14 extra large fresh whole mushrooms
  • 1/4 cup chopped green onions
  • 1/4 cup butter or margarine
  • 1/4 cup (1 oz) blue cheese crumbled
  • 1/3 cup dry fine bread crumbs
  • Salt and pepper

Instructions

  1. Wash the mushrooms and remove the stems.
  2. Chop the stems and cook them with the green onions in butter until tender but not brown.
  3. Add the crumbled blue cheese, 2 tablespoons of bread crumbs, salt, and pepper to the cooked mixture.
  4. Fill each mushroom cap with the cheese mixture and sprinkle with the remaining bread crumbs.
  5. Place the stuffed mushrooms on a baking sheet and bake at 350°F for 12 minutes.
  6. Serve as an appetizer or with a meat entrée.
