  • 2 tsp. (10 ml) vanilla extract
  • 2 c. (500 ml) fresh blueberries, rinsed

Instructions

  1. Reserve the 12 rich crepes.
  2. In a saucepan, combine 2 Tbsp. cornstarch, 2 Tbsp. granulated sugar replacement, a dash of salt, 1 cup skim milk, 1 Tbsp. lemon juice, and 2 tsp. vanilla extract.
  3. Cook and stir over medium heat until the mixture slightly thickens; remove from heat.
  4. Crush 1 cup of fresh blueberries and stir them into the thickened mixture.
  5. Return the saucepan to heat, cooking and stirring until further thickened.

  8. Divide the sauce evenly among the crepes, then fold or roll each crepe.
