Blueberry Hot Bread

Ingredients

  • 2 eggs
  • 1 c. sugar
  • 1 c. milk
  • 1/4 c. melted butter
  • 3 c. flour
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 2 c. blueberries (fresh or frozen without syrup)

Instructions

  1. Beat together eggs and sugar. Add milk and melted butter. Add flour, salt and baking powder. Mix until just combined; do not try to get it smooth. Toss blueberries in a little flour to keep them from sinking to the bottom of the bread. Fold blueberries into mixture. Pour into 2 small, very well greased bread tins. Bake at 350° for 30 to 40 minutes.
