Blueberry Log Roll

Ingredients

  • 7 eggs
  • 1 1/2 c. ground walnuts
  • 1 tsp. baking powder
  • 3/4 c. sugar
  • Cool Whip
  • blueberries
  • oil for pan

Instructions

  1. Brush jelly pan or cookie sheet with oil.
  2. Line with wax paper; oil paper.
  3. Beat yolks and regular sugar until pale yellow and thick.
  4. Beat in ground walnuts and baking powder.
  5. Beat egg whites until stiff; fold into egg and sugar.
  6. Spread batter in pan.
  7. Bake at 350° for 15 to 20 minutes.
  8. Cover with damp cloth and cool.
  9. Dust with powdered sugar.
  10. Spread Cool Whip on cake. Roll up.
  11. Cover cake with Cool Whip and blueberries.
