Bock Choi Pie

Ingredients

  • 1 cooking onion choped finely
  • 1 clove garlic choped finely
  • 4 Tb. spoons butter
  • 1 cup Parmesan cheese grated
  • 3 eggs
  • 1 cup thinly sliced mushrooms
  • salt and pepper to taste.
  • CRUST
  • 2 cups flour

Instructions

  1. Cook the bok choi until very tender(10 to 15 min.) when cold, press with your hands to extract all water and chop finely.
  2. Caramelize the onions and add garlic.
  3. combinethe 3 ingredients.set aside.
  4. CRUST
  5. Mix all the ingredients together
  6. Work them until they are well amalgamated and soft.
  7. Divide the dough in eith equal portions and roll them out till very thin (like paper)
  8. Place the first one in a well buttered mold and pait with melted butter, repit the operation until you have done the first four, fill with the bock choi mixtur.
  9. Make three wells in the mixture and break an egg in each one.
  10. Cover the mixture following the same pocedure as before (with butter in between)
  11. 400 F 35 to 45 minutes (depending in the oven
  12. Note: An egg wash can be given to the top to make it look shinier.
