Boxty are traditional Irish potato pancakes, crispy on the outside and tender inside, perfect for breakfast or hearty snacks, pairing well with butter, bacon, or eggs.

Ingredients

  • 1 lb. raw potatoes
  • 6 oz. plain flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 pt. milk

Instructions

  1. Liquidise or grate the raw potatoes.
  2. Add the flour, salt, and baking powder to the grated potatoes.
  3. Pour in the milk gradually to achieve a dropping pancake consistency.
  4. Drop spoonfuls of the batter onto a hot, greased frying pan.
  5. Fry both sides until golden brown.
  6. Serve hot with butter. For best results, lightly fry and re-fry the batter before serving to prevent browning.
