Delightful French-inspired stuffed mushrooms feature creamy, savory filling with scallions and sherry, perfect as an appetizer or elegant snack for gatherings and special occasions.

Ingredients

  • 80 small, fresh raw mushrooms of uniform size
  • 1 Tbsp. chopped scallions or green onions
  • 1 Tbsp. butter
  • 1 c. heavy cream
  • 1 Tbsp. dry sherry
  • 1/2 tsp. salt
  • 1/9 tsp. pepper

Instructions

  1. Wipe mushrooms dry with a damp cloth.
  2. Remove stems and mince them.
  3. Saute stems and scallions in butter for 2 to 3 minutes, stirring.
  4. Add cream, sherry, salt, and pepper.
  5. Cook until thickened, about 5 to 7 minutes.
  6. Fill mushroom caps with the mixture.
  7. Set aside ready to broil.
  8. Place under the broiler just enough to slightly brown.
