Ingredients

  • 2 small or 1 large fennel bulb
  • 1 Tbsp lemon juice
  • 1/2 cup hot chicken stock
  • 1/2 cup fresh bread crumbs
  • 1 Tbsp grated Parmesan cheese
  • 1 tsp grated lemon peel
  • salt
  • freshly ground pepper
  • 2 Tbsp butter

Instructions

  1. Preheat oven to 375°F.
  2. Butter a small baking dish.
  3. Trim off any tough stalks and the bottom from the fennel bulbs.
  4. Add the trimmed fennel and lemon juice to boiling salted water and cook for 10 minutes.
  5. Drain the fennel and place in the buttered dish.
  6. Add hot chicken stock to the dish with the fennel.
  7. In a small bowl, combine fresh bread crumbs, grated Parmesan cheese, grated lemon peel, salt, and freshly ground pepper.
  8. Sprinkle the breadcrumb mixture over the boiled fennel.
  9. Bake in the preheated oven for 30 to 35 minutes, or until the fennel is tender and the topping is golden brown.
