Braised Pumpkin

Ingredients

  • 12 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon apple juice
  • 34 cup onion, finely chopped
  • 2 cups pumpkin, peeled and coarsely shredded
  • 18 teaspoon white pepper
  • to taste salt (optional)
  • 4 green onions, sliced

Instructions

  1. In a large non-stick frying pan, add the broth, soy sauce, apple juice, onions, pumpkin, and pepper.
  2. Bring mixture to a boil, cover, and reduce heat.
  3. Simmer for 10-12 minutes.
  4. Add salt if you prefer and garnish with green onions.
