  • 6 cups sugar
  • 1 cup brandy

Instructions

  1. Skin and pit the peaches.
  2. Chop the peaches finely.
  3. Remove peel, white portions, and seeds from the oranges.
  4. Chop the oranges finely, including shredded rind or the whole orange.
  5. Put all ingredients except brandy into a large kettle.
  6. Bring to a boil over medium-high heat, stirring frequently to prevent scorching.
  7. Cook until mixture thickens, about 45 minutes.

Tips & Substitutions

For a smoother consistency, consider blending the peach and orange mixture before cooking. If fresh peaches are out of season, frozen peaches can be used as a substitute, just ensure they are well-drained. Adjust the sweetness by reducing sugar slightly if using very ripe peaches. Remember to stir frequently to prevent scorching during cooking.

Serving Suggestions

This brandied peach marmalade is delightful on toasted bread or scones. It also pairs beautifully with cheese boards, especially creamy cheeses like brie or goat cheese. For a unique dessert, serve it over vanilla ice cream or pancakes. It can even elevate a marinade for savory dishes, such as a Marinade For Beef To Barbecue.

Storage & Reheating

Store the brandied peach marmalade in sterilized jars in a cool, dark place. Once opened, keep it refrigerated and consume within a month. To reheat, warm gently on the stove or in the microwave until heated through, ensuring it doesn't boil to preserve the flavor.
