Ingredients

  • 2 eggs
  • 1/2 c. sugar
  • 1 Tbsp. mandarin peel, chopped
  • 2 Tbsp. soft shortening
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. mandarin jelly
  • 1/4 c. brandy
  • 2 c. sifted all-purpose flour

Instructions

  1. Beat eggs until light and foamy.
  2. Beat in the sugar, chopped mandarin peel, and soft shortening.
  3. Mix together the sifted all-purpose flour, baking powder, and salt.
  4. Blend the flour mixture into the egg mixture alternately with the mandarin jelly and brandy to make a smooth batter.
