Ingredients

  • 4 c. cake flour
  • 2 tsp. baking powder
  • 1 tsp. cream of tartar
  • 1/3 tsp. salt
  • 1 c. shortening
  • 3 1/2 c. sugar
  • 2/3 tsp. vanilla
  • 10 egg whites

Instructions

  1. Mix and sift the first four ingredients: cake flour, baking powder, cream of tartar, and salt.
  2. Cream the shortening until soft and airy, then work in the sugar gradually.
  3. Sift the flour mixture into the creamed mixture in several stages, then add vanilla and mix thoroughly.
  4. Beat the egg whites until stiff, two at a time.
  5. Fold each two egg whites into the batter separately, then stir gently to combine.
  6. Turn the batter into a 10-inch layer pan lined with plain paper; do not grease the pan.
  7. Bake at 325°F (160°C) for 1 hour or until tests indicate doneness.
