Ingredients

  • 1 chicken (about 3 1/2 lb.)
  • Salt
  • Freshly ground pepper
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 3 cloves garlic

Instructions

  1. Position a rack in the upper third of the oven and preheat to 475°F.
  2. Season the cavity of the chicken with salt and pepper and place it in a large baking pan.
  3. In a small bowl, combine the olive oil, chopped rosemary, thyme, oregano, and minced garlic, stirring until well blended.
  4. Spread this herb and garlic mixture all over the skin side of the chicken.
  5. Season the chicken generously with salt and pepper on the outside.
