Ingredients

  • 1 broiler-fryer chicken (3 1/2 to 4 lb.)
  • 3 qt. water
  • 1 medium onion, quartered
  • 4 celery ribs
  • 2 chicken bouillon cubes
  • 2 parsley sprigs
  • 1 garlic clove
  • 2 1/2 tsp. salt
  • 1/2 c. thinly sliced carrots
  • 1/2 c. chopped fresh parsley
  • 3 c. cooked rice

Instructions

  1. Place the chicken and water in a large kettle or Dutch oven and bring to a boil.
  2. Reduce heat and add onion, celery, bouillon cubes, parsley sprigs, garlic, and salt if desired.
  3. Cover and simmer until the chicken is tender, about 1 hour.
  4. Remove the chicken from the broth and allow it to cool.
  5. Strain the broth and discard the vegetables.
  6. Add sliced carrots to the broth and simmer until tender, about 15 minutes.
  7. Debone the chicken and cut into cubes.
  8. Add the chicken and chopped parsley to the broth and heat through.
  9. Ladle the soup into bowls and add cooked rice to each serving.
