Broccoli-Cheddar Egg Bake
Ingredients
- 4 eggs ⓘ
- 1 1/2 c. milk ⓘ
- 1 (10 oz.) pkg. frozen broccoli florets or chopped broccoli, thawed and drained ⓘ
- 1 (8 oz.) loaf Italian bread, cut into 1-inch chunks (about 4 cups)
- 1 (4 oz.) jar pimentos, drained and cut into 1-inch pieces (optional) ⓘ
- 1 (4 oz.) pkg. shredded Cheddar cheese (1 c.) ⓘ
- 1/2 tsp. salt ⓘ
- 1/8 tsp. ground red pepper ⓘ
Instructions
- In a 2-quart casserole, beat eggs until mixed.
- In a 2-quart glass measure, heat milk on High 1 1/2 to 4 minutes, until steaming.
- Gradually beat into eggs.
- Stir in bread and remaining ingredients, reserving 2 tablespoons cheese.
- With spatula, lightly press bread mixture into egg mixture.
- Sprinkle with reserved cheese.
- Let stand 5 minutes.
