Broccoli Polonaise

Ingredients

  • 4 Tbsp. butter or margarine
  • 1 garlic clove
  • 1 Tbsp. finely diced red onion
  • 2 Tbsp. chopped fresh parsley or cilantro
  • 1/4 c. breadcrumbs
  • 1 tsp. lemon juice
  • dash of salt
  • 14 to 16 oz. broccoli tops (enough for 4 servings)

Instructions

  1. Saute 1 minced garlic clove, onion, parsley or cilantro in butter.
  2. When butter bubbles, stir in breadcrumbs.
  3. Remove from heat and season with salt and lemon juice.
  4. Blanch 4 portions of broccoli tops in boiling water for 5 minutes.
  5. Turn off heat and let sit for 2 minutes.
  6. Arrange hot broccoli on plate and spoon small amount of warm bread sauce over each portion.
