Ingredients

  • 3 baked potatoes
  • 1 can cream of mushroom soup
  • shredded cheddar cheese
  • 1 to 2 heads broccoli

Instructions

  1. Scoop out the flesh from the baked potato halves, leaving about 1/4 inch in the shell.
  2. Mix the potato pulp with the cream of mushroom soup, chopped cooked broccoli, and shredded cheddar cheese.
  3. Fill each potato shell with the mixture, mounding slightly on top.
  4. Sprinkle additional shredded cheddar cheese over the filled potatoes.
  5. Broil until the cheese is melted and bubbly.
