Broccoli With Beef

Ingredients

  • 1 lb broccoli
  • 14 lb beef flank steak
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 12 teaspoon pepper
  • 3 tablespoons oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon sugar
  • 14 teaspoon salt

Instructions

  1. Cut florets from broccoli stems and set aside.
  2. Peel stems and cut into 2x 1/2" sticks.
  3. Bring a large saucepan of salted water to a boil.
  4. Add broccoli sticks and florets and cook until they turn a bright green color, about 2 minutes.
  5. Drain and rinse under cold running water, drain well.
  6. Slice beef into strips about 1/4" thick.
  7. In a small bowl, toss beef strips with soy sauce, cornstarch, and pepper.
  8. In a wok, heat 2 Tblsp.
  9. of oil over high heat until just smoking.
  10. Add beef and stir fry to desired doneness, about 2 minutes.
  11. Remove to a plate.
  12. Add 2 Tblsp.
  13. water to marinade bowl.
  14. Add remaining 1Tblsp.
  15. oil to wok; return to high heat.
  16. Add ginger and stir fry 2 seconds.
  17. Add broccoli, sugar, salt, brandy, and water in marinade bowl.
  18. Cover and steam 3 minutes until broccoli is tender and water has evaporated.
  19. Return meat to wok.
  20. Toss with broccoli to heat through and serve.
