Ingredients

  • 4 Tbsp. olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. water
  • 4 c. small broccoli florets
  • 1 small sweet red pepper, cored, seeded and cut into 1/2-inch strips
  • 1 tsp. dried oregano, crumbled
  • pinch of red pepper flakes

Instructions

  1. In a heavy 12-inch skillet, heat olive oil over moderate heat for one minute.
  2. Add the chopped onion, minced garlic, water, broccoli florets, red pepper strips, crumbled oregano, and red pepper flakes to the skillet.
  3. Cook, stirring, for 2 minutes.
  4. Cover the skillet, reduce heat to low, and cook for 6 to 8 minutes longer, stirring often, until the broccoli is tender but still crisp.
