Ingredients

  • 2 to 2 1/2 lb. fryer chicken, quartered
  • 3/4 stick butter
  • several large sprigs parsley
  • 1 1/2 tsp. thyme
  • salt
  • pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Lift the skin of each chicken quarter carefully with your fingers, creating pockets without tearing or detaching it from the flesh.
  3. Soften the butter and chop the parsley finely.
  4. Blend the parsley into the butter to form a slightly greenish paste and add thyme.
  5. Spread the herb butter mixture under the loosened skin of each chicken piece.
  6. Season the chicken with salt and pepper as desired.
  7. Brush the chicken with vegetable oil.
  8. Place the chicken in a baking dish and broil until cooked through and golden brown, about 20 minutes.
