Broiled Tomatoes With Mozzarella

A quick broiled tomato and mozzarella dish featuring fresh flavors of basil, oregano, and black pepper, perfect as a light appetizer or side for any Mediterranean-inspired meal.

Ingredients

  • 1/4 lb. Mozzarella cheese, sliced thin
  • 3 medium tomatoes, sliced thin
  • 1/4 tsp. basil leaves
  • 1/4 tsp. oregano leaves
  • 1/4 tsp. black pepper
  • 2 Tbsp. oil
  • 2 Tbsp. vinegar

Instructions

  1. Preheat the oven to broil.
  2. Spray a cookie sheet with Pam or non-stick spray.
  3. Place the tomato slices in a single layer on the prepared cookie sheet.
  4. Top each tomato slice with a slice of mozzarella cheese, allowing some of the tomato to show.
  5. Mix together the basil leaves, oregano leaves, black pepper, oil, and vinegar.
  6. Drizzle the mixture over the tomatoes and cheese.
  7. Place under the broiler for 5 minutes or until lightly browned.
