Ingredients

  • 3 to 4 eggs
  • 3 cups skim milk
  • 5 to 6 slices whole wheat bread, cubed
  • 2 to 3 cups cooked brown rice
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup sugar

Instructions

  1. Beat eggs, sugar, milk, and vanilla together.
  2. Add cinnamon and stir in rice, bread, and raisins.
  3. Pour mixture into a 3-quart casserole dish.
  4. Bake at 350°F (175°C) for 45 to 60 minutes.
  5. Pudding is done when a knife inserted between the edge and center comes out clean.
  6. Let cool to warm before serving.
