Ingredients

  • 1/4 cup butter
  • 3 tablespoons green onion, finely chopped
  • 3 large potatoes, peeled
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 500°F.
  2. Melt butter in a saucepan.
  3. Add chopped green onion to the butter and sauté until tender.
  4. Halve potatoes lengthwise, then slice crosswise into 1/8-inch thick slices.
  5. Line up the sliced potatoes in a buttered 9 x 13-inch baking pan with slices overlapping.
  6. Pour the butter and onion mixture over the potatoes, then season with salt and pepper.
  7. Bake for 20 minutes.
  8. Remove from oven and sprinkle with grated Parmesan cheese.
  9. Bake an additional 5 to 7 minutes, or until the cheese is slightly browned and melted.
