Instructions
- Place oats in a food processor bowl or blender and process until finely ground; set aside.
- Cream butter in a mixing bowl.
- Add sugar and mix well. Add egg and vanilla and beat until combined.
- Combine ground oats, flour, and baking soda; add to the creamed mixture and mix thoroughly.
- Stir in chocolate chips.
- Drop by tablespoons onto a greased cookie sheet.
- Bake in a preheated oven at 350°F (175°C) for about 10 minutes or until golden.
- Remove from oven and transfer to wire racks to cool.
