Ingredients

  • 3/4 cup soft butter
  • 3 tablespoons sugar
  • 1 1/2 cups flour
  • 3 eggs, separated
  • 2 1/4 cups brown sugar, packed
  • 1 cup chopped nuts
  • 3/4 cup shredded coconut
  • confectioners' sugar

Instructions

  1. Cream the butter and sugar together.
  2. Blend in the flour until well combined.
  3. Pat the mixture into the bottom of a 9 x 13-inch pan.
  4. Bake at 350°F (175°C) for 15 minutes.
  5. Beat egg whites until stiff, but not dry, and set aside.
  6. Beat egg yolks until thick and lemon-colored.
  7. Stir in brown sugar, chopped nuts, and coconut.
  8. Gently fold in the beaten egg whites.
  9. Spread the mixture over the baked base.
  10. Return to the oven and bake for an additional 25 to 30 minutes.
  11. Cool completely, then dust with confectioners' sugar and cut into squares.
