Ingredients

  • 1 large butternut squash
  • 1 Tbsp fresh ginger root, minced
  • 1/4 cup unsweetened apple juice
  • freshly ground nutmeg

Instructions

  1. Peel and seed the butternut squash.
  2. Cut the squash into 1/2-inch cubes.
  3. Put the squash, minced ginger, and apple juice into a lightly-oiled baking dish.
  4. Cover and bake in a 350°F oven for 50 to 60 minutes.
  5. Sprinkle with freshly ground nutmeg just before serving.
