- Beat egg whites until foamy.
- Gradually add 1/4 cup packed brown sugar, 2 tablespoons at a time, until soft peaks form. Set aside.
- Melt butter in a saucepan; add 2/3 cup brown sugar and cook until dissolved.
- In another pan, mix egg yolks, milk, tapioca, and salt.
- Cook until the mixture comes to a full boil.
- Add the butterscotch mixture to the egg mixture and stir well.
- Pour a little of this mixture into the meringue and blend well.
- Quickly stir in the remaining mixture.
- Add vanilla extract and let stand for 15 to 20 minutes.
- Stir before serving.
- Serve warm or cold.
