Ingredients

  • 2 eggs, separated
  • 1/4 cup brown sugar
  • 2/3 cup brown sugar
  • 1/4 cup butter
  • 4 cups milk
  • 1/3 cup quick tapioca
  • 1/4 teaspoon salt

Instructions

  1. Beat egg whites until foamy.
  2. Gradually add 1/4 cup packed brown sugar, 2 tablespoons at a time, until soft peaks form. Set aside.
  3. Melt butter in a saucepan; add 2/3 cup brown sugar and cook until dissolved.
  4. In another pan, mix egg yolks, milk, tapioca, and salt.
  5. Cook until the mixture comes to a full boil.
  6. Add the butterscotch mixture to the egg mixture and stir well.
  7. Pour a little of this mixture into the meringue and blend well.
  8. Quickly stir in the remaining mixture.
  9. Add vanilla extract and let stand for 15 to 20 minutes.
  10. Stir before serving.
  11. Serve warm or cold.
