- Preheat oven to 300°F (150°C).
- Reserve 1/2 cup of dry cake mix for topping.
- In a large mixer bowl, combine remaining cake mix, 1 egg, and vegetable oil; mix well until crumbly.
- Press the mixture firmly on the bottom and 1 1/2 inches up the sides of a greased 13 x 9-inch baking dish.
- In the same bowl, beat the softened cream cheese until fluffy.
- Gradually beat in the sweetened condensed milk until smooth.
- Add the remaining 3 eggs and the reserved 1/2 cup of cake mix; beat on medium speed for 1 minute.
- Stir in lemon juice, lemon rind (if using), and vanilla extract.
- Pour the filling into the prepared crust.
- Bake for 50 to 55 minutes or until the center is set.
- Cool to room temperature.
- Chill thoroughly before serving.
- Cut into squares and garnish as desired.
