Ingredients

  • 18 1/4 oz. yellow cake mix
  • 4 eggs
  • 1/4 cup vegetable oil
  • 16 oz. cream cheese
  • 14 oz. sweetened condensed milk
  • 1/4 to 1/3 cup ReaLemon lemon juice
  • 2 teaspoons grated lemon rind (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Reserve 1/2 cup of dry cake mix for topping.
  3. In a large mixer bowl, combine remaining cake mix, 1 egg, and vegetable oil; mix well until crumbly.
  4. Press the mixture firmly on the bottom and 1 1/2 inches up the sides of a greased 13 x 9-inch baking dish.
  5. In the same bowl, beat the softened cream cheese until fluffy.
  6. Gradually beat in the sweetened condensed milk until smooth.
  7. Add the remaining 3 eggs and the reserved 1/2 cup of cake mix; beat on medium speed for 1 minute.
  8. Stir in lemon juice, lemon rind (if using), and vanilla extract.
  9. Pour the filling into the prepared crust.
  10. Bake for 50 to 55 minutes or until the center is set.
  11. Cool to room temperature.
  12. Chill thoroughly before serving.
  13. Cut into squares and garnish as desired.
