Cabbage Cornbread Casserole

Ingredients

  • 1 medium head cabbage, shredded
  • 1 medium onion, shredded
  • 1 small green pepper, shredded
  • salt, pepper and garlic powder to taste
  • 1 can Cheddar soup, undiluted
  • 2 boxes Jiffy cornbread mix

Instructions

  1. Set oven at 350°.
  2. In skillet on medium heat, add a teaspoon shortening.
  3. Add cabbage, onion, green peppers, salt, pepper and garlic powder.
  4. Saute.
  5. (Do not fry.)
  6. Cover, stirring often, then add cheese soup.
  7. Stir, then remove.
  8. Mix Jiffy cornbread according to directions on the box.
  9. Pour cabbage mixture in 9 x 13-inch dish (any dish can be used, depends on how deep or wide you choose), then pour cornbread mixture on top.
  10. Even out.
  11. Bake until cornbread is done, about 20 to 25 minutes.
