Ingredients

  • 1 pkg. Lipton vegetable mix soup
  • 1 pt. sour cream
  • 1/3 c. mayonnaise
  • 1/3 tsp. lemon juice
  • 1 c. frozen chopped spinach
  • 1 large head red cabbage

Instructions

  1. Empty the package of Lipton vegetable mix soup into a large bowl.
  2. Pour the sour cream into the bowl.
  3. Stir well to combine.
  4. Add lemon juice, mayonnaise, and chopped spinach to the mixture.
  5. Mix well until smooth.
  6. Core the head of red cabbage in the middle, scooping out the center while leaving a solid portion to form a bowl.
  7. Save some of the cabbage leaves and shred them on a grater.
  8. Add the shredded leaves to the sour cream mixture and stir.
  9. Spoon the mixture into the hollowed-out cabbage head and arrange the shredded leaves on top.
