Cabbage Tsukemono

A tangy and slightly sweet fermented cabbage dish infused with whiskey, perfect as a refreshing side or snack for those who enjoy bold flavors and fermentation.

Ingredients

  • 5 lb. cabbage, washed and cut into wedges
  • 1 c. hot water
  • 1 c. brown sugar
  • 1/3 c. salt
  • 1/4 c. vinegar
  • 1/4 c. whiskey

Instructions

  1. Heat the hot water, brown sugar, salt, and vinegar until it comes to a boil. Let it cool.
  2. Add the whiskey to the cooled mixture.
  3. Pour the mixture over the cabbage wedges in a container such as a crock that can be weighed down.
  4. Put a weight on top of the cabbage to keep it submerged.
  5. Let it ferment for two days.
  6. Remove the weight, transfer the cabbage to jars or a plastic container, and refrigerate.
