Ingredients

  • 5 lb. boned meat
  • 2 c. rice
  • 1 large onion
  • 2 large tomatoes
  • salt
  • pepper
  • 2 tsp. cumin
  • Arabic spices

Instructions

  1. Parboil the boned meat.
  2. Heat oil in a skillet.
  3. Add chopped onion and cook for 10 minutes.
  4. Add salt, pepper, cumin, and spices as desired. Cook for 10 minutes on reduced heat.
  5. Add 4 cups of broth and the rice.
  6. Raise the temperature and boil until the liquid is dissolved.
  7. Reduce heat and cook for 20 minutes.
  8. Serve the rice with meat on top, without broth.
