- Combine sugar, brown sugar, salt, milk, mashed yams, and corn syrup in a heavy 4-quart saucepan.
- Stir until all ingredients are thoroughly mixed.
- Cook over medium heat until the sugar is dissolved and the mixture comes to a boil.
- Reduce heat and cook to 224°F on a candy thermometer or soft-ball stage. Remove from heat and add butter.
- Do not stir.
- Cool the mixture until it reaches 110°F.
- Chop 1/2 cup of pecans.
- Add vanilla to the cooled mixture.
- Beat until the candy stiffens and loses its gloss.
- Stir in the chopped pecans.
- Spread the candy on a greased 9-inch pan.
- Top with the remaining 1/4 cup pecan halves.
- Cut into squares and serve.
