Ingredients

  • 2 cups sugar
  • 1 1/2 cups packed brown sugar
  • 1/2 teaspoon salt
  • 1 1/3 cups milk
  • 1 cup mashed yams
  • 1/4 cup light corn syrup
  • 1/4 cup butter or margarine
  • 3/4 cup pecan halves
  • 1 1/2 teaspoons vanilla

Instructions

  1. Combine sugar, brown sugar, salt, milk, mashed yams, and corn syrup in a heavy 4-quart saucepan.
  2. Stir until all ingredients are thoroughly mixed.
  3. Cook over medium heat until the sugar is dissolved and the mixture comes to a boil.
  4. Reduce heat and cook to 224°F on a candy thermometer or soft-ball stage. Remove from heat and add butter.
  5. Do not stir.
  6. Cool the mixture until it reaches 110°F.
  7. Chop 1/2 cup of pecans.
  8. Add vanilla to the cooled mixture.
  9. Beat until the candy stiffens and loses its gloss.
  10. Stir in the chopped pecans.
  11. Spread the candy on a greased 9-inch pan.
  12. Top with the remaining 1/4 cup pecan halves.
  13. Cut into squares and serve.
