Ingredients

  • 3 to 5 lb. whiting headless fish
  • 1 Tbsp. seasoned salt
  • 1 Tbsp. black pepper
  • 1 Tbsp. red pepper
  • 1 Tbsp. paprika
  • 2 eggs
  • 2 c. yellow corn meal
  • 1 c. milk
  • 3 c. Crisco
  • 1 c. flour (optional)

Instructions

  1. Cut fins off thawed fish; split fish down the stomach and remove the bone.
  2. Wash the fish and drain.
  3. Season the fish with seasoned salt, black pepper, red pepper, and paprika.
  4. Let the fish stand seasoned for 1 hour.
  5. Heat Crisco in a skillet.
  6. Beat eggs in a bowl; pour milk into eggs slowly and beat.
  7. Pour corn meal into a separate bowl.
  8. Dip the fish into the milk and egg wash, then immediately roll the fish in corn meal.
  9. Place the fish in hot oil in the skillet.
  10. Cover the pan with a lid and fry until brown.
  11. Turn the fish onto the other side and brown.
  12. Return the fish to the first side and remove the lid. When the fish is as crisp as desired, remove from the skillet and drain on paper towels.
