Calderetta
Ingredients
- 2 lb. beef, cut into 1 1/2-inch chunks ⓘ
- 4 Tbsp. soy sauce ⓘ
- 1/2 tsp. salt ⓘ
- 2 garlic cloves, crushed ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 2 medium potatoes, peeled and quartered ⓘ
- 1 tsp. m.s.g.
- 1/2 c. stuffed olives ⓘ
- 1 medium green pepper, seeds removed, cut into 1-inch squares ⓘ
- 3 Tbsp. sherry or vinegar ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 1 medium onion, sliced ⓘ
- 1/2 lb. pepperoni, sliced 1/4-inch thick diagonally ⓘ
Instructions
- Season meat with soy sauce, sherry or vinegar and salt.
- Set aside.
- In hot oil, brown garlic, add onions and cook until transparent.
- Add tomato sauce and beef.
- Stir 2 minutes, reduce heat to low and simmer, covered, for 15 minutes.
- Add about 2 cups water; simmer, covered, for 45 minutes or until meat is tender. Add pepperoni, potatoes, m.s.g. and pepper.
- Simmer 7 minutes or until potatoes are soft.
- Taste.
- Add olives and green pepper. Cook for 3 minutes or more.
- Serves 6 to 8.
