  • 12 large red and green peppers
  • 3 Tbsp. salt
  • 6 large tomatoes
  • 3 c. sugar
  • 1 c. cider vinegar
  • 6 large onions
  • 2 Tbsp. mixed pickling spices

Instructions

  1. Halve, seed, and chop the peppers.
  2. Layer the chopped peppers with salt in a large glass bowl.
  3. Allow to stand at room temperature for 3 hours, stirring several times.
  4. Drain the peppers well.
  5. Combine the drained peppers, peeled and chopped tomatoes, and chopped onions.
  6. Stir in sugar, vinegar, and the tied, mashed pickling spices.
  7. Bring the mixture to a boil, stirring often.
  8. Lower the heat to a simmer to prevent scorching and cook for 30 minutes or until thick.
  9. Remove the spice bag before serving.
