Cantaloupe Ice

A refreshing frozen cantaloupe dessert with a sweet, fruity flavor and a hint of lemon, perfect for hot days and serving groups seeking a cool treat.

Ingredients

  • 1 1/4 cups sugar
  • 1 1/4 cups water
  • 1 large ripe cantaloupe
  • 1 tablespoon lemon juice

Instructions

  1. Place sugar and water in a saucepan and stir over high heat until the mixture begins to bubble and the sugar is dissolved. Simmer for 5 minutes.
  2. Pour the syrup into a jar and refrigerate until cool.
  3. Peel and seed the cantaloupe; cut into cubes.
  4. Puree the cantaloupe in a blender or food processor until smooth, yielding about 3 1/2 cups of puree.
  5. Add lemon juice and the cooled syrup to the cantaloupe puree and blend well.
  6. Freeze in an ice cream machine according to the manufacturer's directions, or pour into trays and freeze for 30 minutes, then blend or process again.
  7. Return to the freezer to firm up before serving.
