Cantaloupe Ice

- Place sugar and water in a saucepan and stir over high heat until the mixture begins to bubble and the sugar is dissolved. Simmer for 5 minutes.
- Pour the syrup into a jar and refrigerate until cool.
- Peel and seed the cantaloupe; cut into cubes.
- Puree the cantaloupe in a blender or food processor until smooth, yielding about 3 1/2 cups of puree.
- Add lemon juice and the cooled syrup to the cantaloupe puree and blend well.
- Freeze in an ice cream machine according to the manufacturer's directions, or pour into trays and freeze for 30 minutes, then blend or process again.
- Return to the freezer to firm up before serving.
