Cape Cod Clam Pie

- Beat eggs in a bowl; set aside 1 tablespoon of beaten egg aside in a cup.
- Drain liquid from the clams; measure 3/4 cup of clam liquid and stir into the eggs along with the minced clams, milk, cracker crumbs, salt, and pepper.
- Spoon the clam mixture into the first pie crust.
- Dot evenly with oleo (butter or margarine).
- Place the second crust over the filling and tuck in edges, then flute to seal.
- Cut slits in the center of the top crust to vent steam.
- Mix the reserved 1 tablespoon of beaten egg with cold water and brush over the crust surface.
- Bake in a preheated oven at 450°F (very hot) for 15 minutes.
- Reduce oven temperature to 350°F and continue baking for 30 minutes or until the crust is golden brown.
- Allow the pie to cool for 15 minutes before cutting into wedges.
