Ingredients

  • 2 (9-inch) pie crusts
  • 2 eggs
  • 2 (10 1/2 oz) cans minced clams
  • 1/2 cup coarse unsalted cracker crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oleo (butter or margarine)

Instructions

  1. Beat eggs in a bowl; set aside 1 tablespoon of beaten egg aside in a cup.
  2. Drain liquid from the clams; measure 3/4 cup of clam liquid and stir into the eggs along with the minced clams, milk, cracker crumbs, salt, and pepper.
  3. Spoon the clam mixture into the first pie crust.
  4. Dot evenly with oleo (butter or margarine).
  5. Place the second crust over the filling and tuck in edges, then flute to seal.
  6. Cut slits in the center of the top crust to vent steam.
  7. Mix the reserved 1 tablespoon of beaten egg with cold water and brush over the crust surface.
  8. Bake in a preheated oven at 450°F (very hot) for 15 minutes.
  9. Reduce oven temperature to 350°F and continue baking for 30 minutes or until the crust is golden brown.
  10. Allow the pie to cool for 15 minutes before cutting into wedges.
