Ingredients

  • 24 shrimp (16 to 20 per lb.)
  • 1 tsp. butter
  • 4 tsp. flour
  • 2 tsp. chopped shallots
  • 1 cup sherry wine
  • 1 cup heavy cream

Instructions

  1. Peel and quickly sauté the shrimp with butter in a hot pan.
  2. Add flour, chopped shallots, sherry wine, and heavy cream to the pan.
  3. Allow the mixture to cook gently for about 5 minutes.
  4. Pour the mixture into an au gratin dish.
  5. Cover with Dejonge Butter.
  6. Place under the broiler until lightly browned.
  7. Serve immediately.
