Ingredients

  • 2 large tart apples
  • 3/4 tsp. cinnamon
  • 1/2 c. packed brown sugar
  • 2 Tbsp. light colored corn syrup
  • 2 Tbsp. butter or margarine
  • 1/2 c. pecan pieces
  • 3 eggs
  • 1 1/4 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg
  • 8 to 10 slices Italian or French bread

Instructions

  1. Peel, core, and slice the apples.
  2. In a small saucepan, combine apple slices and 1/4 cup water. Bring to a boil, then reduce heat and cook, covered, until apples are tender. Drain in a colander.
  3. Gently stir cinnamon into the cooked apples and set aside.
  4. In a saucepan, combine brown sugar, corn syrup, butter, pecan pieces, and 1/4 cup water. Cook over medium heat until the mixture is bubbly and caramelized.
  5. Pour the caramel mixture into a greased baking dish. Arrange the apple slices over the caramel.
  6. Cut the bread into 1/2-inch slices and layer over the apples and caramel.
  7. In a bowl, beat the eggs, then whisk in the milk, vanilla, and nutmeg.
  8. Pour the egg mixture evenly over the bread in the dish.
  9. Let sit for 10 minutes to allow the bread to soak up the custard.
  10. Bake in a preheated oven at 350°F (175°C) for 30 minutes or until set and golden.
