Caramelized Carnitas

Ingredients

  • 1 1/2 lbs pork shoulder, bonless (cut into 1-inch cubes)
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon tequila
  • 1 tablespoon molasses
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, to taste
  • 2 garlic cloves, minced
  • 1/3 cup water
  • 1 green onion, sliced, both green and white parts

Instructions

  1. Place pork cubes in single layer in 10-inch skillet.
  2. Top with remaining ingredients except green onion.
  3. Heat to boiling; reduce heat.
  4. Simmer uncovered, stirring occasionally until the water has evaproated and the pork is slightly caramelized, about 35 minutes.
  5. Sprinkle with green onion and serve with wooden picks.
