- Cook the lasagna noodles in salted, boiling water until just tender. Drain and place in cold water.
- Drain the spinach well and mix it with ricotta cheese, salt, pepper, nutmeg, beaten egg, and Parmesan cheese.
- Drain the noodles and pat dry with paper towels.
- Cut the ham slices in half lengthwise.
- Place a ham slice on each noodle.
- Spread each noodle with the spinach mixture.
- Roll up each noodle and place them on their sides in a 9x13 inch baking dish.
- Pour spaghetti sauce over the lasagna roll-ups.
- Bake at 350°F for 35 to 40 minutes, or until heated through and bubbly.
- Serve hot.
