Ingredients

  • 8 curly edged lasagna noodles
  • 1 (10 oz.) package chopped spinach, thawed
  • 1 1/2 cups ricotta cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 8 slices ham (1 oz. each)
  • 1 (15 oz.) jar spaghetti sauce

Instructions

  1. Cook the lasagna noodles in salted, boiling water until just tender. Drain and place in cold water.
  2. Drain the spinach well and mix it with ricotta cheese, salt, pepper, nutmeg, beaten egg, and Parmesan cheese.
  3. Drain the noodles and pat dry with paper towels.
  4. Cut the ham slices in half lengthwise.
  5. Place a ham slice on each noodle.
  6. Spread each noodle with the spinach mixture.
  7. Roll up each noodle and place them on their sides in a 9x13 inch baking dish.
  8. Pour spaghetti sauce over the lasagna roll-ups.
  9. Bake at 350°F for 35 to 40 minutes, or until heated through and bubbly.
  10. Serve hot.
