Ingredients

  • 1 lb. white crab meat
  • 1 pt. milk
  • 1 pt. cream
  • 1/2 stick butter
  • 2 Tbsp. sherry
  • 4 blades whole mace
  • 6 pieces lemon peel
  • 1/2 cup cracker crumbs
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Put milk in the top of a double boiler with mace and lemon peel; allow to simmer for a few minutes.
  2. Add crab meat, butter, and cream; cook for 15 minutes.
  3. Thicken the soup with cracker crumbs; season with salt and pepper.
  4. Allow to stand on the back of the stove for a few minutes to bring out the flavor.
  5. Just before serving, add sherry.
