Ingredients

  • 1 c. margarine
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 2 c. flour
  • 1 1/2 c. chopped nuts

Instructions

  1. Preheat the oven and prepare baking sheets.
  2. In a mixing bowl, cream together margarine and sugar until smooth.
  3. Add egg yolk (reserve egg white) and vanilla to the mixture, blending well.
  4. In a separate bowl, whisk together flour and salt.
  5. Gradually add dry ingredients to the creamed mixture, mixing until combined.
  6. Fold in chopped nuts.
  7. Divide the dough in half and roll each portion into a flat oval shape.
  8. Spread your choice of preserves over one dough layer, leaving a small border around the edges.
  9. Place the second dough layer on top and press gently to seal.
  10. Cut into individual cookies or slices.
  11. Brush with the reserved egg white if desired for a shiny finish.
  12. Bake until golden and set, then cool before serving.
