Ingredients

  • 1 1/2 c. grated carrots
  • 1/2 tsp. lemon flavoring
  • 3 1/2 c. sugar
  • 1/2 c. sweetened condensed milk
  • 1/2 c. water

Instructions

  1. Cook grated carrots, sugar, sweetened condensed milk, and water to soft ball stage (234° to 238°).
  2. Remove from heat; add lemon flavoring and cool to room temperature.
  3. Beat until creamy.
  4. Pour into a buttered pan; pat down to 1-inch depth.
  5. When firm, cut into squares.
