Ingredients

  • 6 sweet potatoes
  • 2 Tbsp vegetable oil
  • 2 Spanish onions
  • 1 tsp minced garlic
  • 2 lb carrots
  • 1 orange (juice and zest)
  • 1 Tbsp ginger (in a pouch)
  • 1 1/2 qt water
  • Salt

Instructions

  1. Bake the sweet potatoes at 350°F for 4 minutes.
  2. Peel and cut the sweet potatoes into small pieces.
  3. Sauté sliced Spanish onions, minced garlic, and thinly sliced carrots in vegetable oil.
  4. Add salt to taste.
  5. Cook the mixture for 30 minutes until tender.
  6. Add cold water and the peeled, cut sweet potatoes to the pot.
  7. Add the ginger pouch, orange zest, and orange juice.
  8. Cook for an additional 10 minutes.
  9. Remove the ginger pouch from the soup.
  10. Puree or mash the soup if it is too thick.
  11. Add a little water to adjust the consistency if needed.
