Ingredients

  • 1 qt. grated raw carrots
  • 2 lemons, grated rind
  • 4 lemons, juice

Instructions

  1. Mix grated raw carrots, grated lemon rind, and lemon juice in a saucepan.
  2. Simmer the mixture over low heat until it thickens.
  3. Pour the mixture into containers and freeze.
  4. Serve chilled or hot with meat dishes.
